For restaurant owners doing $1M to $20M+
Most restaurants can't grow past their owner.
The Scaling Engine installs the management operating system that lets a restaurant run, and expand, without the owner on the floor. Built on the systems Alex Yanovsky used to grow Sushi Master to 735 locations.
Application only. $20,000 a year, or $2,000 a month.

In owners' own words
It's rarely a sales problem. It's a management problem.
From 52 recorded coaching and sales calls with restaurant owners. The revenue is there. What is missing is a business that works when the owner is not in it.
“I know that when you have a business, you shouldn't be the slave to the business. And I'm a slave to it. I just bought myself a job.”
“Those managers are more like a figurehead. They don't do enough managerial stuff for what their title says.”
“Whatever area I'm focused on grows. The area I don't focus on goes down.”
What we focus on
Three things. Nothing else.
Every playbook, every call, and every audit question serves one of these three outcomes. If a problem is not one of them, it is not our problem to solve.
Increase profitability
Prime costs, labor, waste, menu, and the numbers nobody owns. The Deep Audit™ finds the margin that is leaking; the Quick Wins report says where to recover it in the first 30 days.
Bernard: profit up while revenue grew, because the new hires were overseas.
Install management systems
The org chart, roles with outcomes, the 7-Step Management System, daily Result-Analysis-Action reports, and a meeting rhythm that teaches. The business stops depending on the owner.
Liron: from every role in the restaurant to there if and when he wants to be.
Scale into new locations and markets
Once the operation runs on reports, expansion becomes a repeatable process: the next site, the next market, the next hire, with the numbers that say the model is ready to copy.
Wesley: one Chicago location to four across three cities in ten months.

The mission
How it works
Audit. Game plan. Weekly execution.
Three steps, in that order. The audit finds the causes, the game plan sequences the fixes, and the weekly calls make sure they get installed.
01The Deep Audit™
Week 1A 50-point diagnostic across prime costs, labor efficiency, leadership gaps, and growth constraints. Most owners fix symptoms. The audit finds causes, and produces a Quick Wins report for the first 30 days.
02The game plan
Week 2The Business MRI Call™: a private session that turns the audit into a 16-week roadmap. Which system gets installed first, which hire comes first, what number moves first. Specific to the business, not a generic curriculum.
03Weekly execution
Every week afterThe plan gets installed on the weekly calls with Alex, often with the owner's managers listening in. Each week: what moved, what did not, what changes tomorrow. The board keeps the owner honest.

On every weekly call
“Result, analysis, action. That order is non-negotiable.”
What gets installed
One operating system. Three ways it reaches the business.
Scaling Engine OS™
The playbooks
Six operating systems, ninety-seven lessons, with the org charts, scorecards, report templates, and process maps used to run 735 locations.
Weekly with Alex
The coaching
A live group call every week with Alex Yanovsky. Owners bring their numbers and their bottleneck; the room works through it.
A room of operators
The board
A private board of owners opening their next locations. Members borrow what works: ghost kitchen tests, overseas hiring, expansion math.
Case studies
The restaurants we worked with. The numbers they moved.
Real owners, recorded interviews, dated figures. Nothing rounded up.
Results vary. Client outcomes shown on this site are real but not typical, and depend on each owner's business, market, team, and effort. The Scaling Engine provides education and coaching and does not guarantee revenue, profit, or growth.
Head coach and spokesperson
Alex Yanovsky
Alex built Sushi Master from a handful of stores to 735 locations, 10,000 employees, and roughly $200 million a year in revenue. He did it with a management system, not with more hours, and he says he worked less with 700 locations than he did with three.
He leads every Founders Board call. His job is to look at an owner's numbers and structure, say what he would do, and then teach the managers how to do it.

One way in
There is one program, and it is by application.
By application
The Founders Board
Weekly coaching with Alex, the full Scaling Engine OS™, The Deep Audit™, and a private board of operators. For established restaurants building toward more locations. $20,000 a year, or $2,000 a month, by application.
We take a small number of owners at a time, because Alex is on every call. If the fit is not there we say so on the call, rather than sell you something smaller.
Questions
Straight answers.
What does The Scaling Engine actually do?
We install a management operating system inside a restaurant business: the org chart, the roles and outcomes for each seat, the daily management discipline, the reports, and the meeting rhythm. Then we coach the owner and the managers while it takes hold.
It is the same system Alex Yanovsky used to run Sushi Master at 735 locations. The coaching is delivered through the Founders Board, a private group of owners who meet with Alex every week.
Who is it built for?
Owners of restaurants doing roughly $1M to $20M+ a year who want to open more locations, or simply want the business to run without them on the floor. Most members run one to five locations when they join.
It is not for people who have not opened yet, and it is not a marketing agency. If the main problem is filling seats rather than running the operation, we are probably not the right fit.
Is this done for you?
No. The owner and the team do the installing. We provide the playbooks, the templates, the weekly coaching, and a room of operators doing the same work. Members who take action get results. Members who only watch the calls do not.
How is this different from a consultant?
A consultant hands over a report. The Founders Board hands over a system, then meets with the owner every week for months while it is installed. And the person leading those calls has actually done it at scale, which is rare in restaurant coaching.
How much time does it take?
One weekly group call with Alex, plus the implementation work between calls. The first 60 to 90 days are the heaviest, because that is when the org chart, scorecards, and reporting get built. After that, the system runs on the meeting rhythm and takes less of the owner's week, not more.
Does it work for my type of restaurant?
Members run sushi hand-roll bars, brunch concepts, fast casual rice bowls, steakhouses, pizza, bubble tea, and full-service dining. The management system is about people, roles, and numbers, not cuisine. The playbooks are adapted to each concept during the first weeks.
